Spicy Chorizo-Wrapped Pigs in Blankets with Honey-Lime Glaze

Ingredients

• 12 piece Chorizo sausages (small, cocktail size)
• 320 g Puff pastry
• 1 piece Egg
• 60 ml Honey
• 30 ml Lime juice
• 2 g Chilli flakes
• 0.5 g Black pepper
• 0.5 g Salt

Instructions

1. Preheat your oven to 200°C. Line a baking tray with parchment paper.
2. Unroll the puff pastry and cut it into 12 equal strips, approximately 2 cm wide.
3. Wrap each chorizo sausage tightly with a strip of puff pastry, ensuring the ends overlap slightly.
4. Beat the egg in a small bowl to create an egg wash. Brush the top of each wrapped sausage with the egg wash for a golden finish.
5. Arrange the wrapped sausages on the prepared baking tray.
6. Bake for 15-20 minutes, or until the pastry is golden brown and puffed up.
7. While the pigs in blankets are baking, prepare the glaze: In a small saucepan, combine the honey, lime juice, chilli flakes, salt, and pepper. Heat gently over low heat, stirring until well combined and slightly warmed.
8. Once baked, remove the pigs in blankets from the oven. Brush generously with the warm honey-lime glaze immediately.
9. Serve hot and enjoy your spicy twist on a classic!
